essen | Gluten-Free Maple Nut Granola

I made this super yummy granola for Lonnie the other day, and it's already halfway gone! He LOVES granola for breakfast, but the store-bought varieties are full of sugar and so many other things we don't want going into our bodies. This recipe can be switched up a bit depending on your taste. It is packed with lots of nuts and seeds which are full of good fats and protein, and although it does still contain sugar, pure maple syrup is much less refined and is full of vitamins and minerals which the body can break down and process more slowly compared to white cane sugar. (This recipe is gluten-free because I used gluten-free oats, but feel free to use whatever you prefer. Old fashioned or quick cook oats work better than the steel-cut kind!)

Try this sweet, crunchy granola with almond milk and some fresh berries on top for breakfast (it will keep you full until lunch!) or package some up for snacking on in the afternoon. 

Gluten-Free Maple Nut Granola

  • 1/4 cup coconut oil
  • 1/2 - 3/4 cup pure maple syrup
  • 2 1/2 cups gluten-free old fashioned oats
  • 1 cup pecans
  • 1/2 cup hazelnuts
  • 1/2 cup sliced almonds
  • 1/4 cup hemp seeds
  • 1/4 cup cacao nibs
  • 1/4 cup coconut chips
  • dash of sea salt, vanilla extract, and cinnamon, to taste

Preheat oven to 350F degrees. In a roasting pan, measure out coconut oil, and if it's still solid at room temperature, allow it to melt in the pan in the preheating oven. Once liquified, combine with maple syrup. (Start with the smaller amount of syrup; depending on how dry the ingredients are, you may want to add more to create a "stickier" texture to allow the ingredients to clump together better! Also, more syrup if you have a sweeter tooth ;) Add oats, pecans, hazelnuts, almonds, coconut chips and stir to combine, or use your hands! Then add salt, vanilla and cinnamon. Sprinkle hemp seeds and cacao nibs over the top after the mixture is spread in an even layer. Bake for 15-20 minutes. I usually check it halfway and see if anything is getting too brown. Let cool and store in an airtight container. Enjoy!
